Aachi Sabji Masala is a spice mix of authentic spices that can be used for the preparation of daily Indian curries or vegetable mixes. It contains a mix of spices that gives a good taste and aroma to the dish with lots of vegetables. This is a spice mix used for the daily mixed vegetables that can be eaten with naan, chapatti or roti.

Coriander, Cumin, Black Pepper, Red Chilli Powder, Dry Ginger, Dry Mango, Salt, Cloves, Cinnamon, Bay Leaves, Turmeric, Fennel, Asafoetida.
Explanation ingredients
Coriander: the leaves have a lemony flavour, while the seeds have a slightly sweet, aniseed flavour.
Cumin: gives a nutty and peppery taste to dishes. Can be used in, for example, curry or chili.
Turmeric: spice extracted from the roots Curcuma plant. It provides flavor and color in curry dishes.
Ginger: has an intense pungent taste. Can be used in, for example, desserts, bread or biscuits. In India it is widely used with fish.
Bay leaf: has a somewhat bitter woody taste. Gives extra depth to dishes such as stew, soup, chicken or bolognese.
Fennel: promotes digestion and gives fresh breath. Fennel tea is used for coughing.
Clove: gives a herbaceous and spicy taste to dishes.
Cinnamon: Can be used with both spicy and sweet dishes due to the deliciously warm and sweet taste.
Asafoetida: devil's dung (a herbaceous plant). It has a beneficial effect and promotes digestion. It is an alternative to using onion and/or garlic in dishes.

Storage advice
Store in a cool and dry place. After opening, transfer contents to an airtight container. The spice mix can be kept up to 2 years after production date.
Preparation
- Heat 3 tablespoons of oil in a pan, add 120 grams of chopped onions and fry until golden brown.
- Add about 200 grams of seasonal vegetables (of your choice) and fry for 6 minutes.
- Add 2 tablespoons of Aachi sabji masala and stir well into the vegetables.
- Add the required amount of salt and half a cup of water.
- Cook for 8 minutes until the vegetables become soft.
- Once cooked, serve the Sabji masala with naan/chapathi.
