Characteristics
Jaggery is a tasty unrefined sugar made from jaggery. It is a little less sweet than maple syrup and a little thicker than honey. The color varies from golden yellow to dark brown. With its deep caramel-like flavor and soft texture, jaggery is perfect for use in baking, in hot drinks or as a healthy sweetener in dishes.
Jaggery has some health advantages over refined sugar: it is absorbed into the blood less quickly and therefore has a less drastic effect on blood sugar levels. Jaggery also contains useful nutrients such as minerals (magnesium and potassium) and vitamins.
