The grains of the mottakaruppan rice are dark. It retains a pink hue and flavor while cooking. Like all brown rice, mottakaruppan rice has a long cooking time and needs extra water.

Mottakarupan rice contains magnesium, iron, calcium, phosphorus, selenium, manganese, vitamins K, B1, B2, B3 and B6, dietary fiber and protein.

Preparation

For best results, it is advisable to soak the rice in water, half an hour to two hours before use, but this is not necessary. Just rinse the rice before cooking and then cook in the ratio of 1 cup of rice to 2-2½ cups of water. It will take a little longer to cook than regular white rice, about 30 to 40 minutes.
