Characteristics
Garam Masala is a blend of ground spices commonly used in Indian cooking to flavor both meat and vegetarian dishes. The spices for garam masala are usually roasted to bring out more flavor and aroma and then ground. The word masala simply means 'spice' and garam means 'hot'. Garam masala adds warmth, sweetness, floral notes and a touch of heat from the black pepper. It is intended to be a fragrant spice as well as flavorful. Garam masala generally not fiery hot.

Foeli: the seed coat that surrounds the nutmeg. Can be used in sweet desserts (rice porridge) or with fish, soups and sauces.
Star anise: dried fruit with an aniseed flavour.
Bay leaf: has a somewhat bitter woody taste. Gives extra depth to dishes such as stew, soup, chicken or bolognese.
