This highly concentrated thokku, based on fresh tomatoes with the tastiest mixed herbs and oil, is often used by adding 1 or 2 tablespoons (depending on your taste) to rice as a flavor enhancer, but can also be used as a dipping sauce with papads.
Ingredients
Tomato, sesame oil, salt, tamarind extract, chili powder, spice mix, asafoetida, mustard seeds, acidity regulators (INS 260, INS 330), dried peppers, curry leaves.
Explanation Ingredients
Tamarind:Â pulp of a legume. It has a sour taste.
Asafoetida: devil's dung (a herbaceous plant). It has a beneficial effect and promotes digestion. It is an alternative to using onion and/or garlic in dishes.
