Chakra Red Parboiled Rice
Characteristics
The Red parboiled rice is a red rice from the south of India and Sri-Lanka and has different names: Red Matta rice, Sri-Lankan red rice, Kerala Matta rice, Rosematta rice, Palakkadan Matta rice, Kerala Red rice. In the Netherlands this is still an unknown rice variety. The red parboiled rice is a special rice. In texture, it is reminiscent of pearl barley or tarly: a little chewy, bouncy. The taste is also slightly different, a bit more earthy, nutty, actually also a bit like pearl barley.

Storage advice
Keep in a cool, dark and dry place. After opening, transfer the contents to an airtight container.
Preparation
For best results, it is recommended to rinse the rice a few times and then soak it in cold water for half an hour to 2 hours before use. However, this is not necessary. Drain the rice.
Bring 1 part rice to a boil in a pan with 2 parts water with a pinch of salt. Then let it cook gently with the lid on the pan for about 40 minutes. Once the rice has absorbed most of the water, remove the pan from the heat and let it rest with the lid on for about 5 minutes.
