Characteristics
Mango powder gives a fresh, sour taste to a dish. It is made by grinding dried mangoes. Mango powder is used in many North Indian vegetarian dishes.
It combines well with chili powder, cloves, coriander, cumin and ginger.
Mango powder gives a fruity tartness to vegetable curries, stews, soups, chutneys and fillings. It is also delicious in marinades for chicken, fish, seafood or vegetables. Mango powder is a key ingredient in Indian chat masala and goes well with beans, cauliflower, chickpeas, eggplant and potatoes.
Mango powder is ideal for giving a sour taste when extra moisture, such as with lemon juice, is not desirable. 1 teaspoon of mango powder is equivalent to 3 tablespoons of lemon juice.
