Aachi Biryani Masala

Red chili powder, coriander, cloves, cinnamon, fennel, cardamom, ginger, garlic, onion, nutmeg, star anise, salt.

Coriander: the leaves have a lemony flavour, while the seeds have a slightly sweet, aniseed flavour.
Clove: gives a herbaceous and spicy taste to dishes.

Nutmeg: ideal for savory or sweet dishes.
Fennel: promotes digestion and gives fresh breath. Fennel tea is used for coughing.
Cardamom: herbaceous plant of the ginger family. It has a pungent smell and the taste is sweet with a hint of lemon, camphor and bergamot. The green variant provides spice and freshness. The black variant is suitable for more powerful dishes such as curries and stews.
Ginger: has an intense pungent taste. Can be used in, for example, desserts, bread or biscuits. In India it is widely used with fish.
Nutmeg: ideal for savory or sweet dishes.
Garlic: has distinctive taste and can be used in many dishes.
Star anise: dried fruit with an aniseed flavour.

Storage advice
Store in a cool and dry place. Shelf life up to 2 years after production date. After opening, transfer contents to an airtight container. Perishable after opening.
Preparation
- Fry 200 grams of onion in 200 milliliters of oil in a pressure cooker.
- Add 3 sliced tomatoes, 200 grams of yogurt or cottage cheese.
- Add 1 tablespoon lemon juice and 50 grams Biryani Masala.
- Add 500 grams of vegetables of your choice or 1 kg of chicken meat or 1 kg of lamb.
- Let this boil for 10 minutes.
- Add the necessary amount of water and 1 kg of Biryani rice.
- Add salt to taste.
- Add coriander and/or mint leaves and cook until it whistles.
- After about 15 minutes, the tasty Biryani is ready to be served.
