Characteristics
Wholemeal spelt flour is excellent for baking bread and as a base for savory pies.
Spelled flour is made from the spelled grain, Triticum spelta. This is an ancient crop and one of the ancestors of our current wheat.
This flour is ground on millstones at the Commandeursmolen in Mechelen, Limburg. When grinding, it is ensured that the temperature of the flour does not exceed 40°C. This way the taste and aroma are better preserved!
The whole grain is ground, including the germ which contains oils that give the flour a unique taste, aroma and texture. By grinding the germ, the flour has a slightly shorter shelf life.
The baking quality of the flour can vary depending on the season, the varieties used and the type of soil.
The Commander uses grain from the immediate vicinity as much as possible for the flour. The mill works on water power and does not need any other source of energy than water from the river Geul.
