Pilau originated somewhere in the Middle East, but due to its high level of flavors, the dish spread far and wide. The Arab world and the Indian subcontinent developed their own variations, perfected their recipes and shared it with the world's most remote locations.

Ingredients

Garlic, ginger, cilantro, salt, bay leaf, maltodextrin, sugar, star anise, black cardamom, white pepper, fennel.

Explanation Ingredients

Ginger: has an intense pungent taste. Can be used in, for example, desserts, bread or biscuits. In India it is widely used with fish.
Garlic: has distinctive taste and can be used in many dishes.
Sesame seeds: aromatic with a nut flavor.
Bay leaf: has a somewhat bitter woody taste. Gives extra depth to dishes such as stew, soup, chicken or bolognese.
Fennel: promotes digestion and gives fresh breath. Fennel tea is used for coughing.
Cardamom: herbaceous plant of the ginger family. It has a pungent smell and the taste is sweet with a hint of lemon, camphor and bergamot. The green variant provides spice and freshness. The black variant is suitable for more powerful dishes such as curries and stews.
Coriander: the leaves have a lemony flavour, while the seeds have a slightly sweet, aniseed flavour.
Star anise: dried fruit with an aniseed flavour.

Storage advice

Keep in a cool and dry place. After opening, transfer the contents to an airtight container.

Preparation

For the preparation of 500 grams of chicken:

  1. Heat ghee and a similar amount of oil in a rice cooker.
  2. Add 200 grams of chopped onion and fry until golden brown.
  3. Add 2 green chilies cut lengthwise, 1 tablespoon ginger / garlic paste.
  4. Heat this until the raw smell disappears.
  5. Add 15 grams of Aachi Pilau Biryani Masala, chopped mint leaves and fry for 2 to 3 minutes.
  6. Add 500 grams of marinated chicken (marinated in 30 grams of Aachi Pilau Biryani Masala for 7 to 10 minutes).
  7. Mix everything together well.
  8. Add ½ cup of milk with the required amount of water and 500 grams of Basmati rice.
  9. Add salt to taste.
  10. Finally, apply chopped cilantro leaves.
  11. Close the rice cooker with a lid and cook until the rice is cooked.
  12. Then let it rest for 15 minutes with the lid closed.
  13. The delicious Pilau Biryani is ready to be served.

After opening, store the rest of the spice mix in an airtight container and use a clean, dry spoon.
