Aachi Dum Biryani Masala
Characteristics
Dum Biryani is an aromatic, delicious and authentic Indian rice dish made using the layered "dum" method.
Dum biryani can be made with vegetables as well as with meat. This Aachi Hyderabadi Dum Biryani masala is also suitable for vegetarians.

Ingredients
Red chilli powder, ginger, garlic, black pepper, bay leaf, cinnamon, cumin, coriander, fennel, cardamom and salt.
Explanation Ingredients
Ginger: has an intense pungent taste. Can be used in, for example, desserts, bread or biscuits. In India it is widely used with fish.
Garlic: has distinctive taste and can be used in many dishes.
Cinnamon: Can be used with both spicy and sweet dishes due to the deliciously warm and sweet taste.
Cardamom: herbaceous plant of the ginger family. It has a pungent smell and the taste is sweet with a hint of lemon, camphor and bergamot. The green variant provides spice and freshness. The black variant is suitable for more powerful dishes such as curries and stews.
Cumin: gives a nutty and peppery taste to dishes. Can be used in, for example, curry or chili.
Fennel: promotes digestion and gives fresh breath. Fennel tea is used for coughing.
Coriander: the leaves have a lemony flavour, while the seeds have a slightly sweet, aniseed flavour.
Bay leaf: has a somewhat bitter woody taste. Gives extra depth to dishes such as stew, soup, chicken or bolognese.

Storage advice
Keep in a cool and dry place. After opening, transfer the contents to an airtight container.
Preparation
For 500 grams of meat or chicken:
- Sauté 200 grams of onion and ginger garlic paste in 200 grams of vegetable oil.
- Add 4 sliced tomatoes and 2 sliced green peppers and fry this fruit well.
- Now add chicken or meat or the desired vegetables and let it fry for 10 minutes.
- Add 45 grams of Dum Biryani Masala with 50 grams of curd/sour cream, chopped coriander and mint leaves and fry well.
- Boil 500 grams of basmati rice in 1 liter of water (add salt to taste if necessary).
- Put 3/4 of the cooked rice in a cooking pot with a lid and pour the prepared curry over it.
- Then spread the remaining rice on top and let it simmer for another 10 minutes on a low heat with a closed lid.
After opening, store the rest of the spice mix in an airtight container and use a clean, dry spoon.
